Healthy Chicken Taco Casserole

This is such an easy, healthy, and inexpensive meal to make. It combines all those flavors your family will love. I substituted the sour cream for Plain Greek Yogurt and it was so good!! My family has trouble with dairy, but for whatever reason, they seem to be able to handle certain kinds of yogurt and cheese. That makes my life a little more simple when cooking…:) This is a great freezer meal to add to your list of recipes (I will explain how in the recipe notes!) Enjoy!
Healthy Chicken Taco Casserole
This super easy, healthy, and delicious meal, is sure to be a family favorite!

Ingredients
- 1 1/2 lb boneless chicken breast
- 1 large green pepper
- 1 large onion
- 1 package taco seasoning (I use gluten free McCormick) *some taco seasonings HAVE milk in them. If there is an allergy, check over ingredient lists*
- 1 16 oz jar Pace Chunky Salsa (I use medium heat)
- 1 1/4 cups frozen corn
- 12 corn tortillas
- 1 cup Plain Greek yogurt
- 2 cups Mexican style cheese (I used a little extra cheese to sprinkle on the tortillas before layering them)
- 2 Tbsp olive oil
- Guacamole for each person to spread on top (YUM!) (optional)
Instructions
- Preheat oven to 400 degrees. Dice up pepper and onion into bite size pieces. Next, cut chicken up into small chunks. In a large skillet, over medium heat, put in olive oil and let it heat up. Next, add diced pepper, onion, chicken, and Taco seasoning; combine well. Cook mixture until chicken is done. (If you notice the mixture is too dry, add 1/4 cup water to mixture and stir.) To this, add Salsa and corn; stir and combine altogether. Continue cooking this until heated through. In a 9 x 13 pan, lightly spray with oil and line the bottom with 6 tortillas. They will slightly over lap. Cover the tortillas with HALF EACH of the chicken mixture, Greek Yogurt, and cheese. Add the last 6 tortillas and repeat the same layering process. Bake at 400 degrees for 30-35 min. **If you like your cheese less browned on top, then cover the top with foil and bake for 25 min, then take off foil and leave uncovered to bake the last 10 min.**
Notes
To make a freezer meal for easy meal prep: cook chicken, pepper, onion, and taco seasoning, like explained above. After it’s cooled, place in a gallon bag or freezer friendly container. Label it and you have the main ingredients all done and ready to go! Just make sure you have the other ingredients purchased and this is sure to be a super easy dinner for any busy family!
