Amazing Oatmeal Chocolate Chip Cookies
These cookies are probably my favorite! They have such a wonderful texture and can be made with Spelt, all purpose or a Gluten Free 1 to 1 flour. I always use unbleached White Spelt Flour or Bob’s Redmill Gluten Free 1 to 1. I am going to start out by confessing something to all of you. This Blog is called Pure and Simple Mama because I try really hard to have pure ingredients. However, when it comes to making cookies, I have tried using everything there is that is considered “healthy.” My problem is, the ONLY thing that made my cookies taste like my Mom’s and Grandma’s was Butter Flavored Crisco. I know, go ahead and cue the gasps and finger shaking…LOL! This recipe is simple and as “pure” as I could get it. Trust me, making these cookies will not kill you! They will make you feel so happy, that you trusted me and made them. Probably, the BEST part about these cookies is that they can be FROZEN. Yes, you read that right! Make them and freeze for later. So, if your family is wanting some dessert, just get these out of the freezer bag, onto a sheet pan and pop in the oven. Very quick and simple dessert that the whole family will love. I usually bake a dozen or two, then freeze the rest. Below are pictures of the cookies ready for the freezer. So easy!!
Amazing Oatmeal Chocolate Chip Cookies

Ingredients
- 1 cup butter flavored Crisco (1 block)
- 2 cups packed brown sugar
- 2 eggs
- 1 Tbsp pure vanilla
- 2 cups unbleached white Spelt flour or Bob's Redmill gluten free 1 to 1 flour (All purpose flour also works)
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- 2 cups quick oats or quick Gluten Free oats
- 1 cup Enjoy Life mini chocolate chips (these are dairy free)
Instructions
- Preheat oven to 350 degrees. In a medium bowl, place all dry ingredients; except the oats and chocolate chips. Stir to combine and set aside. In a large mixing bowl, mix the Crisco, brown sugar and vanilla until creamed. Now, add 1 egg at a time; mixing well in between each egg. Next, add the flour mixture to the creamed mixture in the mixing bowl. Blend this until flour is incorporated well. Mix in oats just until blended. Finally, fold in chocolate chips with a spoon or spatula.
- Grease a cookie sheet and place cookies on the pan. (I use a small/medium cookie scoop so my cookies are all the same size.) Bake at 350 degrees for about 8-10 minutes
