Cinnamon & Sugar Apple Cake

I love when I can make something that reminds me of my Grandparents. Both of my Grandma’s were wonderful cooks and loved to feed people. If you didn’t go to their house hungry, you had better get that way because you were not allowed to leave without eating. I love having those memories and want, so much, to be that kind of Mother and Grandma. A freezer full of goodies to bring out and share at a moments notice. It is the little things that leaves such sweet memories.
When we think of apples, we don’t often think about cake. It seemed like when I was young, fruit was always added to desserts, some how. When I found this recipe from pinch of yum.com it made me think of Both of my Grandmas. They both made an apple cake when I was a kid and this is very similar. I changed the original recipe, slightly, to be used with Spelt & Gluten Free Flours. The aroma that fills your house during baking is wonderful! It is so moist and delicious. The cinnamon & sugar topping takes this cake to the next level! You can’t help, but go for another piece. I feel this cake could be eaten at breakfast with coffee, as an afternoon snack or as dessert. So, pretty much anytime! I hope you all enjoy this recipe and maybe, this will spark a sweet memory of times past! 🙂
Cinnamon & Sugar Apple Cake
Equipment
- Mixer
- Oven
- 9 x 13 pan
Ingredients
- 1 1/2 cups packed brown sugar
- 1/3 cup oil
- 1 cup buttermilk Easy buttermilk recipe:(place 1 Tbsp vinegar in a measuring cup, fill the rest of the way with coconut milk or any milk to make 1 cup)
- 1/2 Tbsp Pure Vanilla
- 1 egg
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 1/2 cups Unbleached white spelt flour or Bob's Redmill Gluten Free 1 to 1 (If using Gluten Free, add 1 tsp xanthan gum)
- 2 cups apples chopped in small pieces (about 3) (I use Gala, Fuji or Pink Lady Apples)
Topping
- 1/2 cup Pure Cane sugar
- 1 tsp cinnamon
- 1/4 cup quick oats or Gluten Free quick oats
- 2 Tbsp butter (chopped in small chunks)
Instructions
- Preheat oven to 325 degrees. Grease a 9 x 13 pan and set aside. On a cutting board, chop apples into small chunks; set aside. In a Med/large mixing bowl, Mix ingredients in the order given, except apples. Blend this until smooth. Now, add chopped apples and turn mixer on low; just until incorporated. Next, pour mixture in the greased 9 x 13 pan. When it is evenly distributed in the pan; set aside.
Topping directions:
- Get a small bowl to mix together the topping. Combine the sugar, cinnamon and oats. Stir this up and then add in cubed butter. Cut the butter in with the sugar mixture until it resembles pea sized chunks. (I use my hands, but a fork also works) Now, sprinkle evenly over top of the cake batter.
- Place pan in a 325 degree oven for 45 min or until toothpick comes out clean
