Gluten Free Chocolate Cake

My girls LOVE chocolate and I have been trying to perfect a Gluten Free cake that doesn’t have as much sugar and isn’t too rich. That way, we can eat it anytime and not feel as bad about sneaking those little bites in throughout the day…..Come on, you all know exactly what I am talking about! I just keep going by the pan and cutting off a little sliver of cake and it seems harmless, until you realize just how many little slivers you had…LOL! Oh, well! We are happy people and that is all that matters, right? Of course, chocolate makes everyone happy and therefore, should be eaten daily.

When I was a kid, my Grandma always made a chocolate cake that she called a snack cake. It was light, moist and was so full of chocolatey flavor that would satisfy any sweet tooth. I wanted to try and achieve this with Gluten Free flour and wanted it to taste good enough that someone would never know or question if it was Gluten Free. I came up with this recipe and I think it is SO good! I hope you like it! It is moist, chocolatey, and I made it with a little less sugar than other recipes I have made. Gluten Free Chocolate Cake

Ingredients
  

  • 1 Stick Earth Balance Dairy Free Butter, almost melted (Real butter should work fine)
  • 1 Cup packed brown sugar
  • 3/4 Cup cane sugar
  • 1 Tbsp pure vanilla
  • 3 eggs
  • 1 1/2 Cups coconut milk (Any milk will work)
  • 2 Cups Bob's Redmill Gluten Free 1 to 1 flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp xanthan gum
  • 3/4 Cup Hershey's cocoa

Instructions
 

  • Preheat oven to 350 degrees. In a medium size bowl, add all dry ingredients and stir together with a spoon until incorporated; set aside. In a mixing bowl, place butter, sugars and vanilla; then mix well. Next, add eggs one at a time mixing well in between each. Now, add your dry ingredients, along with the milk. Mix for 2 minutes on high, until mixture gets very smooth. Pour into a GREASED 9×13 pan and bake for about 35 min or until a toothpick comes out clean.
