- 1 Stick Earth Balance Dairy Free Butter, almost melted (Real butter should work fine)
- 1 Cup packed brown sugar


- 3/4 Cup cane sugar


- 1 Tbsp pure vanilla


- 3 eggs
- 1 1/2 Cups coconut milk (Any milk will work)
- 2 Cups Bob's Redmill Gluten Free 1 to 1 flour


- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 1/2 tsp xanthan gum


- 3/4 Cup Hershey's cocoa


Preheat oven to 350 degrees. In a medium size bowl, add all dry ingredients and stir together with a spoon until incorporated; set aside. In a mixing bowl, place butter, sugars and vanilla; then mix well. Next, add eggs one at a time mixing well in between each. Now, add your dry ingredients, along with the milk. Mix for 2 minutes on high, until mixture gets very smooth. Pour into a GREASED 9x13 pan and bake for about 35 min or until a toothpick comes out clean.
