One Eyed Jack
As you all may have noticed, I LOVE easy breakfast foods! This recipe is an old favorite that I feel needs to be brought back! You might have had this made for you by your Grandma? Maybe, an Aunt or your Mom? My husband remembers his Grandma making it for him. Hopefully, this will bring back some good memories or perhaps, make some new ones for your family. It is not only easy and healthy, but so much fun for the kids. It tends to get boring just having toast and eggs. However, if you take that piece of bread and cut a biscuit size hole out of the middle, brush with melted butter; then grill your bread with an egg in the hole, it suddenly becomes….. a One Eyed Jack! That same old toast and egg gets a whole new makeover! Guess what? It is not just for breakfast. This recipe would make a great lunch or a light dinner and the adults will enjoy it as much as the kids. Try it!! The bread gets nice and grilled, thanks to the brushed butter. You can decide how you want your egg. My family likes the egg to stay a little runny. That way, when you cut into it with a fork, a little bit of that yummy yoke, gets into every bite of that buttery, toasty goodness! One Eyed Jack
Equipment
- Stove top
Ingredients
- 1 piece of any kind of bread (I used my Homemade Spelt bread)
- 1 Tbsp butter or olive oil
- 1 egg
- salt & pepper to taste
Instructions
- Place a skillet on Low/Med heat and let warm up. While waiting, (if you are using butter) melt in a small microwave safe cup or bowl. Use a biscuit cutter or the top of a glass, to cut a circle out of the middle of the bread. Now, take a brush and brush on the butter or olive oil all over one side of the bread; along with the circle you cut out. When the skillet is hot, place buttered side of the circle & bread down and brush the other side with butter once in the skillet. Next, crack the egg in the hole of the bread and use salt & pepper to taste. When you can tell the egg has cooked on the other side, turn over and cook until your egg is the desired consistency. (We like to leave ours a little runny, but you can do whatever you like.)
