One Eyed Jack

Just like your Grandma made, this old favorite will become your kids "new favorite!" This will give eggs and toast a whole new makeover.

Ingredients
  

  • 1 piece of any kind of bread (I used my Homemade Spelt bread)
  • 1 Tbsp butter or olive oil
  • 1 egg
  • salt & pepper to taste

Method
 

  1. Place a skillet on Low/Med heat and let warm up. While waiting, (if you are using butter) melt in a small microwave safe cup or bowl. Use a biscuit cutter or the top of a glass, to cut a circle out of the middle of the bread. Now, take a brush and brush on the butter or olive oil all over one side of the bread; along with the circle you cut out. When the skillet is hot, place buttered side of the circle & bread down and brush the other side with butter once in the skillet. Next, crack the egg in the hole of the bread and use salt & pepper to taste. When you can tell the egg has cooked on the other side, turn over and cook until your egg is the desired consistency. (We like to leave ours a little runny, but you can do whatever you like.)
