Rosemary Ham & Potatoes

Ham has always been one of my favorite foods. It is probably because my Grandma could make ham better than anybody I know. When I would stay in the summers and spend days at a time, she would always feed me till I could pop! Her freezer was never without a roast with potatoes & carrots and a ham with potatoes. She even had desserts in the freezer. Cookies and cakes ready to go whenever I wanted it. I LOVED it! She could have the best meal ready and on the table in about 30 minutes. There is nothing better than to be spoiled and loved by your Grandparents. It is something you never forget!

Grandma’s Ham had a flavor that no one else’s had. I used to watch and help her make it. Her secret ingredient, she told me, was green pepper. She would add it to her ham and roast. She would say the pepper was just for an added flavor and not to eat. I have never forgotten that and do the same thing to mine and will pass that little secret on to my kids. Hopefully, they will keep it going for years to come.

Rosemary Ham & Potatoes reminds me, so much, of Grandma’s ham. It makes me feel like a little of her is with me when I make it. Makes my heart happy to have my kids enjoy it as much as I used too.

Rosemary Ham & Potatoes

This super easy and delicious meal is great served for lunch or an easy one dish dinner! It is Gluten Free and requires minimal ingredients, which makes for a wonderful BUDGET friendly meal!

Ingredients
  

  • 2 Large Ham Steaks
  • 4-5 Med-Large Potatoes (peeled & sliced into thin circles)
  • 2 Tbsp bacon grease, olive oil, or melted butter
  • 1 small Onion (sliced into rings or chunks)
  • 1/2 Green Pepper (just for flavor)
  • 1/3 Cup water
  • 1 tsp dried Rosemary (This is a taste preference, use more or less depending on what you like)
  • Sprinkle Garlic Powder, Salt & Pepper over all potatoes & Ham Steak to your families taste preference.

Instructions
 

  • Preheat oven to 375 degrees. Grease a 9 x 13 pan or casserole dish with your oil of choice. Next, wash, peel, and slice potatoes in 1/4-1/2 inch thick rounds. (like you would for scalloped potatoes) Slice your onion in rings or chunks, and cut 1/2 green pepper in large chunks. Next, place sliced potatoes, onion, and green pepper in your baking dish. Sprinkle 1/2 tsp of Rosemary on vegetables; along with garlic powder, salt & pepper. With your hands or a spoon, toss these vegetables all up so that the seasonings and oil get incorporated. Try and make sure all potatoes are spread evenly on the bottom. It is ok if they are overlapping a little bit. You just don't want a large pile of potatoes in an area or they won't cook properly.

  • Add 1/3 cup water to potatoes. Next, season Ham steaks with the other 1/2 tsp Rosemary, garlic powder, salt, and pepper. Lay them over the potato mixture in the pan. Place foil over the pan and bake for 20 min with foil. After 20 min, remove foil and bake for another 30-35 minutes. This time really depends on the thickness of your ham steaks. Also, check your potatoes and make sure they are done, by using a fork to check if they are tender. (Picture is Raw Ham before it's cooked)
