Barbecue Skillet Chicken Thighs

This dish uses boneless, skinless chicken thighs and a few other ingredients to give you a meal packed full of flavor and on the table in under an hour.

- 1 package Boneless, skinless chicken thighs I get a package with 6-8 thighs
- 2 tsp onion powder
- 2 Tbsp brown sugar
- 2 tsp garlic powder
- 2 tsp Italian seasoning
- 2 tsp salt
- 1 tsp pepper
- 1 Tbsp bacon grease or coconut oil
- 1 onion (cut in rings or slices)
- 1/2 cup KC masterpiece barbecue sauce I am sure any barbecue sauce will work. I just prefer this brand.
- 3/4 cup chicken broth or stock
Preheat your oven to 375 degrees. Place raw thighs in a dish to season. Get a large, oven safe skillet, such as an iron skillet, and place on your stove top. Turn burner on to med heat and place oil in the pan to heat up. In a small bowl, stir together all sugar and spices, then season both sides of thighs, thoroughly. In another bowl, mix together the barbecue sauce and broth together; set aside.
Once the pan and oil are hot, add chicken thighs to your pan and add the onion. Cook on each side for 7-10 min. You are looking for slight browning to occur. (Don't let the pan get too hot or the chicken will burn.) Some stoves vary with temp so just be watchful. After cooking on both sides, add the barbecue and broth mixture to the pan. Make sure to get liquid mixture incorporated throughout the entire skillet. I usually pick up each piece, turning them over making sure all is covered in the yummy sauce.
Now, place skillet in your 375 degree oven for about 15-20 min. It just needs to get bubbly and let all those flavors get soaked in to each and every piece of chicken. When finished, take out and serve over rice or with mashed potatoes.
