Brownie in a Mug

As you already know from my recipes, I LOVE CHOCOLATE! So, as you might have guessed, brownies are going to rank very high on my list of favorites. The only problem is, there were times when I wanted one brownie and didn’t want to have to make a full batch. This might have been because I would have this craving late at night while my husband and I were watching TV. The last thing I want to do is dirty the kitchen with more dishes and then have to wait (what feels like forever) for them to bake….lol! I know, I am quite a mess when it comes to my late night snacks:) I had to figure this little problem out and find how to make a brownie in a mug, just like you can buy in the store. You know, those cute little commercials with the girl wrapped in a blanket, sitting by a cozy fire, all while eating her one serving microwave brownie? I wanted that to be me…..SO, my version of Heaven in a mug, has an added flavor that you might not expect, but it adds such amazing depth of flavor….Espresso powder. Again, one of my favorite things, coffee, paired together with chocolate. How can you go wrong? My Breakfast in a mug, starts your day off right, and my Brownie in a mug, ends your night with very sweet dreams!

Brownie in a Mug

This brownie has everything you want to fill that sweet tooth. Warm, gooey, and so chocolatey!

  • Microwave

Ingredients
  

  • 1/4 cup unbleached white spelt flour or all purpose gluten free flour (Regular flour should work fine)
  • 1/4 cup brown sugar
  • 1 Tbsp cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp espresso powder (optional, but so yummy!)
  • 1/4 tsp Pure vanilla
  • 1 Tbsp olive oil
  • 2 Tbsp any kind of milk
  • throw in a few chocolate chips (optional)

Instructions
 

  • In a large mug, combine all dry ingredients and chocolate chips. Next, add oil, milk, and vanilla. Stir and make sure all is mixed well. Take a spoon along the bottom of the mug and make sure all the flour is mixed up. If not, it will be clumpy and have hard spots of flour in your brownie. Place mug in microwave for 1 minute and 15 seconds. The time all depends on how you like your brownie. If you like it gooey, check at 1 minute and see if it is at the desired texture you like.
