Easy Breakfast in a Mug

What goes together with a crazy morning routine? You know what crazy morning I’m talking about: Overslept, the kids are not cooperating, everyone is in a mood and hungry. Nothing you have to eat (that is quick) sounds good to anyone? Does this sound familiar? Well, if this is your house in the morning, you NEED this super, simple recipe! The best part is…..it’s HEALTHY and the kids will love it! This is so easy, that your kids can make it, allowing you to have some much needed few minutes to collect your thoughts before heading out the door. I have had this recipe so long that I am not sure where it came from. I think my Mom had me try it and everyone in my house liked it, including my husband. It has protein, fruit and oats, all in one scrumptious cup! You can put whatever fruits you like in it and make it your own. This muffin cup will fill you up and make mornings a little bit more enjoyable…:)

Ingredients
  

  • 1/3 cup Gluten Free quick cooking oats (Regular quick oats also work)
  • dash salt
  • 1/4 tsp cinnamon
  • 1/4 cup brown sugar (not packed) This can be reduced to 2 Tbsp. This totally depends on personal preference and taste. If you are trying to watch sugar intake, then reduce to what works for you.
  • 1 egg
  • 2 Tbsp any kind of milk (I use coconut milk)
  • 1/4 cup frozen blueberries (you can use any kind of fruit you like; be creative)
  • 1 Tbsp Enjoy life miniature chocolate chips (Use any chocolate chips you have or leave them out, if you prefer)

Instructions
 

  • Get a microwave safe, large mug or deep soup bowl and lightly spray with cooking oil. Place all dry ingredients in mug and stir together. Next, add egg and milk; mix well. Add frozen blueberries/or fruit of choice and chocolate chips. Stir until all is incorporated together. Place in microwave for about 3 minutes and 30 seconds.

Notes

**If you want this to be super quick and easy, place already measured, dry ingredients(including the chocolate chips) in a plastic bag. This way, all you or your child has to do is grab a packet and add wet ingredients.  Make enough for the week and…BOOM, breakfast is done!**
