Easy Breakfast in a Mug

This Easy Breakfast muffin has quick oats, an egg, fruit, and a few dark chocolate chips

Ingredients
  

  • 1/3 cup Gluten Free quick cooking oats (Regular quick oats also work)
  • dash salt
  • 1/4 tsp cinnamon
  • 1/4 cup brown sugar (not packed) This can be reduced to 2 Tbsp. This totally depends on personal preference and taste. If you are trying to watch sugar intake, then reduce to what works for you.
  • 1 egg
  • 2 Tbsp any kind of milk (I use coconut milk)
  • 1/4 cup frozen blueberries (you can use any kind of fruit you like; be creative)
  • 1 Tbsp Enjoy life miniature chocolate chips (Use any chocolate chips you have or leave them out, if you prefer)

Instructions
 

  • Get a microwave safe, large mug or deep soup bowl and lightly spray with cooking oil. Place all dry ingredients in mug and stir together. Next, add egg and milk; mix well. Add frozen blueberries/or fruit of choice and chocolate chips. Stir until all is incorporated together. Place in microwave for about 3 minutes and 30 seconds.

Notes

**If you want this to be super quick and easy, place already measured, dry ingredients(including the chocolate chips) in a plastic bag. This way, all you or your child has to do is grab a packet and add wet ingredients.  Make enough for the week and...BOOM, breakfast is done!**
